SEO article: How to care for a cast-iron pan

How to care for a cast-iron pan so it lasts a lifetime

A good cast-iron pan can outlive its owner, but only if it's looked after. The good news: caring for cast iron takes about two minutes after each use. Here's what to do every day, how to season the pan and what to do if rust appears.

Daily care: clean while it's warm

  1. Let the pan cool slightly, but clean it while it's still warm. Food comes off more easily.
  2. Rinse with hot water and scrub with a stiff brush or a chain-mail scrubber. A drop of mild dish soap is fine; modern soaps won't strip properly built seasoning.
  3. Dry completely. Wipe with a towel, then put the pan on low heat for 2–3 minutes until every drop has evaporated.
  4. Oil lightly. Rub in half a teaspoon of vegetable oil with a paper towel, then wipe off the excess. The surface should look matte, not shiny.

Avoid: soaking the pan, the dishwasher and leaving it to air-dry. All three lead to rust.

How to season cast iron

Seasoning is a thin layer of oil baked onto the metal. It protects the pan from rust and makes it naturally non-stick. Re-season a new pan once before first use and any pan that looks dull or patchy.

StepWhat to doTime
1Wash, dry and warm the pan5 min
2Rub a thin layer of oil with a high smoke point everywhere, including the handle2 min
3Wipe off as much oil as you can1 min
4Bake upside down at 230 °C, with foil on the rack below1 hour
5Let it cool in the oven1–2 hours

Repeat 2–3 times for a new or restored pan.

What to do if your cast iron rusts

Light orange spots are not a disaster. Scrub them off with steel wool and a little water until you see bare grey metal, rinse, dry on the stove and season the pan using the table above. After two rounds, the pan will cook as well as before.

Quick answers

Can I cook tomatoes in cast iron? Yes, for short dishes. Long-simmered acidic sauces can wear down fresh seasoning.

Why is my pan sticky? Too much oil was left on during seasoning. Bake it again for an hour at 230 °C.

About this service

An opinion column argues one clear point that a newspaper or trade outlet's readers will care about this month, backed by the author's experience, and most expert drafts fail because they explain a field instead of taking a position. We write your column around your argument, with a news hook in the opening, two or three pieces of evidence from your experience or sources you name, the strongest counter-argument answered and a close that tells readers what should change. It is written in your voice for you to submit under your name.

What is included

  • What you getA finished opinion column at the length the outlet accepts, with headline options and a one-line author bio, plus a short pitch email to the opinion editor in the higher packages. You get it as formatted text and as HTML you can paste into your site.
  • One clear positionAn argument, not an overview
  • News hookWhy readers should care this month
  • Counter-argumentThe strongest objection answered
  • Your voiceMatched to your own writing sample
  • Pitch emailTo the opinion editor, in Standard and Premium

We will ask you:

  • What is your argument, in one or two sentences?
  • Which outlet do you plan to submit to?
  • Why does it matter right now?

Questions and answers

Is it acceptable that you write it and I sign it?

Many published columns are drafted with help. The argument and experience are yours, and you review and approve every line. Check the outlet's rules on authorship before submitting.

Will the outlet publish it?

That is up to the editor. A timely hook and the right length improve the odds, but nobody can promise publication.

Do you check the facts?

We use the facts and sources you give and flag claims that need a source. You confirm every number before you submit.
