SOP set: opening and closing procedures for a small café
SOP-02: Closing the café
| Purpose | Leave the café clean, safe and ready for the morning shift |
| Who | The closing barista; the shift lead signs off |
| When | Start at 5:30 pm, doors locked at 6:00 pm, finished by 6:45 pm |
| You need | Closing checklist sheet, till key, cleaning caddy, blue cloths |
Before you start
Warning: Never switch off the main power at the wall. The fridges and the alarm run on the same board.
Steps
- At 5:30 pm, turn the door sign to "Last orders". Customers already inside can stay until 6:00.
- Switch the coffee machine to rinse mode. Press and hold the cup button for 5 seconds. You should see: "RINSE" flashing on the display and hot water running through both group heads for about 2 minutes.
- Take out the portafilters and soak them in the black container with one cleaning tablet. Leave them for 20 minutes.
- Move cakes and sandwiches to the back fridge. Label anything opened today with today's date and "Use by tomorrow".
- Record the fridge temperatures on the log sheet. You should see: between 1 °C and 5 °C. If a fridge shows above 5 °C, go to step 12 first.
- At 6:00 pm, lock the front door and turn the sign to "Closed".
- Close the till. Press MENU, then "End of day", then "Z report". You should see: the report printing with today's total. Do not count the cash at the counter; take the drawer to the office.
(Steps 8–14: floors, bins, alarm and handover note.)
If something goes wrong
| Problem | What to do |
|---|---|
| Fridge above 5 °C | Move food to the second fridge, note the time and temperature, message the shift lead |
| Z report does not print | Replace the paper roll; if it still fails, write the total from the screen and photograph it |
| Alarm will not set | Check the back door is fully shut; the alarm will not arm with it open |

About this service
Moving a site to a new host goes wrong in predictable ways: a forgotten database, email that stops when the nameservers change, a broken SSL certificate or a weekend of downtime because DNS was switched too early. We write a written migration checklist for your site type and the two hosts: what to inventory and back up, how to copy files and databases, how to test on the new server before switching, when to lower the DNS TTL, the switch itself, and a rollback plan. You or your developer tick off each step in order.
What is included
- What you getA written migration checklist in phases from inventory to rollback, with commands or panel steps for your hosts, a timeline for the switch and a post-move test list, on the order page and as a Word (.docx) or PDF file.
- InventoryFiles, databases, email, cron jobs and certificates
- Test before switchPreview the site on the new server
- DNS timingTTL lowered in advance, switch at a quiet hour
- Rollback planHow to go back quickly if something fails
- Written guideNot a call or a live lesson
How it works
- 1BriefYou name both hosts and the site setup
- 2ChecklistWe write the phases and steps
- 3MoveYou or your developer follow it
What we need from you
Your current and new host, the site type such as WordPress, an online store or a custom app, the domains, email and other services on the account, screenshots of both control panels with personal details hidden, and when traffic is lowest.
We will ask you:
- Which host are you leaving, and where are you moving?
- What kind of site is it?
- Is email hosted on the same account?
- Who will do the move: you or a developer?

Questions and answers
Will you move the site for me?
No. We never log in to your hosts. The checklist is detailed enough for you or a developer to follow.
Can a move really have no downtime?
For most sites, yes, if you test first and lower the TTL in advance. Stores with live orders need a short freeze, which the checklist plans for.
What about my SEO?
If the domain and addresses stay the same, rankings are usually unaffected. The checklist includes checks for redirects and robots.txt after the move; positions are not promised.
