SOP set: opening and closing procedures for a small café

SOP-02: Closing the café

PurposeLeave the café clean, safe and ready for the morning shift
WhoThe closing barista; the shift lead signs off
WhenStart at 5:30 pm, doors locked at 6:00 pm, finished by 6:45 pm
You needClosing checklist sheet, till key, cleaning caddy, blue cloths

Before you start

Warning: Never switch off the main power at the wall. The fridges and the alarm run on the same board.

Steps

  1. At 5:30 pm, turn the door sign to "Last orders". Customers already inside can stay until 6:00.
  2. Switch the coffee machine to rinse mode. Press and hold the cup button for 5 seconds. You should see: "RINSE" flashing on the display and hot water running through both group heads for about 2 minutes.
  3. Take out the portafilters and soak them in the black container with one cleaning tablet. Leave them for 20 minutes.
  4. Move cakes and sandwiches to the back fridge. Label anything opened today with today's date and "Use by tomorrow".
  5. Record the fridge temperatures on the log sheet. You should see: between 1 °C and 5 °C. If a fridge shows above 5 °C, go to step 12 first.
  6. At 6:00 pm, lock the front door and turn the sign to "Closed".
  7. Close the till. Press MENU, then "End of day", then "Z report". You should see: the report printing with today's total. Do not count the cash at the counter; take the drawer to the office.

(Steps 8–14: floors, bins, alarm and handover note.)

If something goes wrong

ProblemWhat to do
Fridge above 5 °CMove food to the second fridge, note the time and temperature, message the shift lead
Z report does not printReplace the paper roll; if it still fails, write the total from the screen and photograph it

About this service

Most team wikis fail in the first month: pages are created at random, nobody knows where a new page belongs, and the search returns five outdated versions of the same process. We design the structure of your Notion or Confluence space from your notes: top-level sections, page naming, owners and a simple review rule, and then write the first pages people will actually open, such as a team overview, how we work, key processes and an onboarding hub. Each page comes in a format you can paste straight in, with headings and toggles marked where they help.

What is included

  • What you getA wiki structure with page owners and naming rules plus the first pages written out, on the order page and as a Word (.docx) or PDF file to paste into Notion or Confluence.
  • Space structureSections, sub-pages and where things go
  • Naming and ownersSo pages stay findable and current
  • First pages writtenTeam overview, how we work, key processes
  • Onboarding hubA start page for new teammates
  • Page templatesFor processes, meeting notes and decisions

How it works

  1. 1
BriefYou describe the team and send notes
  2. 2
StructureWe plan sections and write the first pages
  3. 3
DeliveryYou paste the pages into your tool

What we need from you

What your team does and how big it is, which tool you use, the questions people ask each other most, your existing docs or notes (PDF, Word or Excel), and screenshots of the current space if there is one.

We will ask you:

  • Which tool will the wiki live in?
  • What does the team do, and how many people use it?
  • Which questions do people ask each other most?
  • Which pages matter most to write first?

Payment protection

You pay when you order, but the money is released only for accepted work.

  • Fixed priceThe package price does not change after you pay.
  • The money is reservedWhen you pay, the amount is only reserved. It is released to the service once you accept the work.
  • Checked before deliveryEvery result goes through a quality check before it reaches you, and you see it on the order page before accepting it.
  • Free revisionsAsk for changes within your brief as many times as the package allows.
  • Acceptance after 3 daysIf within 3 days of delivery you neither accept the work nor ask for changes, it is accepted automatically. If you write in the order chat after delivery, the order waits; once we answer, we may start the 3 days again and will say so in the chat.
  • Redo or a full refundIf the result does not match your brief and the revisions did not fix it, or the work takes more than twice its deadline, write in the order chat: we will redo the work or refund the payment in full.

Questions and answers

Will you build the pages inside our Notion?

No, we do not log in to your workspace. You get page texts and the structure to paste in; it takes minutes per page.

Can you tidy our existing messy wiki?

Yes. Send screenshots of the page tree and export key pages as PDF or Word; we propose a new structure and rewrite the most used pages.

Do you add databases and linked views?

We describe which database or template would help and what fields it needs; setting it up stays with you.
